Skillet Apple Pie

If you follow me on Instagram you may have noticed my love for baking in a cast iron skillet. It has made everything I've baked in it so much better. From pizza to corn bread to the best yet- apple pie! I tweaked my go-to apple pie recipe and baked it in this skillet instead of a pie dish. I think it's because cast iron gets really hot-it made the crust brown and crispy and the filling thick and gooey. It was delicious! Recipe below, give it a try! =)

Skillet Apple Pie
  • 1 recipe pie crust
  • 1 cup packed brown sugar
  • 1/2 cup butter
  • 3/4 cup granulated sugar
  • 3 Tbsp all purpose flour
  • 1 tsp ground cinnamon
  • 1/8 tsp salt
  • 6-8 cups thinly sliced peeled cooking apples 
  • 1 egg white
  • 2 Tbsps granulated sugar for topping
  • Ice cream (optional)

1. Preheat oven to 350 degrees.

2. Prepare pie crust. On a lightly floured surface roll out dough and set aside.

3. Peel and slice apples. I use this apple slicer.

4. In a large mixing bowl stir together the granulated sugar, 3 Tbsp flour, cinnamon and salt. Add apple slices and toss until coated. 

5. Melt butter in a 10" cast iron skillet over medium heat. Add brown sugar and cook, stirring constantly until sugar is dissolved. Remove from heat and place one pie crust in skillet over brown sugar mixture.

6. Spoon apple mixture over pie crust and top with remaining pie crust in the pattern of your choice.

7. Whisk egg white until foamy. Brush the top of the pie crust with egg white and sprinkle with 2 Tbsp granulated sugar. Cut slits in the top of the crust for steam to escape. (If you are doing a lattice style crust you don't need to cut slits.)

8. Bake at 350 for one hour or until golden brown and bubbly. Cover with aluminum foil during the last 10 minutes to prevent over browning if needed. Cool on a wire rack for 30 minutes before serving. 

9. Enjoy with a big scoop of vanilla ice cream!
