The Modest Macaroni



I know what you must be thinking right now. "Is this becoming a food blog?" And the answer is.... NO. =) I'm not that good of a cook. I do have some fun tutorials coming up and have been busy planning Claire's birthday party for next month. And...

Come back tomorrow for some exciting news.

But until then here is a recipe for an amazingly easy recipe for those nights when you want something quick and easy for dinner. It's meant to be a side dish but we just eat it by itself with some salad when I'm in a pinch. This recipe came from Matt's grandma and in my recipe book it's called Grandma's Mac and Cheese but for today I renamed it the Modest Macaroni.

Ingredients:
  • 2 cups elbow macaroni noodles
  • Tomato sauce (about 21 oz.) You could also use spaghetti sauce
  • Cheese I usually use a mixture of cheddar and mozzarella 
  • I like to add some Italian seasonings and garlic salt to taste
Directions:
Preheat your oven to 350 degrees. Boil the noodles in salted water until tender and drain. Layer the cooked noodles, sauce and cheese in your dish. I like to sprinkle on some seasonings into the sauce but I try not to add a lot as Matt likes it without since that's the way his grandma made it. It's important to use a good quality cheese since most of the flavor comes from that. I don't like to use reduced fat in this recipe. It just doesn't melt the same. Cook for 15-20 minutes or until the sauce is bubbling and the cheese is melted. Easy and cheesy! Ya can't beat that!
