An oldie but a goodie

I told Claire she could choose whatever she wanted for dinner last night and she chose pancakes. We eat breakfast for dinner at least once a week. It's quick, easy and everyone loves it! In honor of fall I changed up our usual pancake recipe for one a little more festive. I posted about it last year but I think it deserves a repost so here it is again.

Pumpkin Pancakes
1 cup flour
1 Tablespoon sugar
1/2 teaspoon salt
1/2 teaspoon pumpkin pie spice
1 teaspoon baking powder
1/2 teaspoon baking soda
2 eggs separated
1 cup milk
1/2 cup pumpkin
2 Tablespoons vegetable oil

Mix dry ingredients in a large bowl. Then mix egg yolks, milk, pumpkin and oil in a separate bowl. Stir into dry ingredients. Beat the egg whites with a mixer until soft peaks form then fold into the batter. Cook them on a greased skillet over medium-low heat until golden brown. I funneled my batter into an empty and cleaned out ketchup bottle and squeezed the batter onto the skillet. It's so much easier to make shapes with them that way.

Happy Friday!
