Pumpkin Pancakes

Yesterday was a beautiful fall day full of fun fall activities at the Sims household. Matt insisted we wait until it was cooler to go Apple picking and I'm so glad we did! To begin the day I made Claire her absolute favorite breakfast, pancakes. I used the pumpkin pancake recipe I found last year snooping through Matt's sisters recipe book and just tweaked it a little to make them fluffy. I have this thing for fluffy pancakes. I made them in the shape of pumpkins for a little added "fallness". Here is the recipe.


Pumpkin Pancakes

1 cup flour
1 Tablespoon sugar
1/2 teaspoon salt
1/2 teaspoon pumpkin pie spice
1 teaspoon baking powder
1/2 teaspoon baking soda
2 eggs separated
1 cup milk
1/2 cup pumpkin
2 Tablespoons vegetable oil

Mix dry ingredients in a large bowl. Then mix egg yolks, milk, pumpkin and oil in a separate bowl. Stir into dry ingredients. Beat the egg whites with a mixer until soft peaks form then fold into the batter. Cook them on a greased skillet over medium-low heat until golden brown. I funneled my batter into an empty and cleaned out ketchup bottle and squeezed the batter onto the skillet. It's so much easier to make shapes with them that way. Claire thinks her pancakes must always be in a shape. Usually Mini Mouse. Yesterday she was ok with pumpkins. Next, maybe snowmen?
