Chocolate Cream Cheese Cupcakes

A few days ago my friend Rachel and her little girl Emma (or as Claire would say her "great friend") came over for a day of crafting and playtime. Whenever we have lunch guests I like to try and make our lunches a little more special than usual. I found this recipe and made it for dessert. It was a big hit! My husband even said it could possibly be the best cupcake he'd ever eaten. That's big coming from him as he doesn't get that enthusiastic about chocolate. 




Cream Cheese Chocolate Cupcakes:

Filling:
1 package (8 oz.) cream cheese, softened
1/3 cup sugar
1 egg
1/8 tsp salt
2 cups chocolate chips
(you could also do half peanut butter chips and half chocolate)

Cupcakes:
1 1/2 cup all-purpose flour
1 cup sugar
1/4 cup baking cocoa
1 tsp. baking soda
1/2 tsp salt
1 cup water
1/3 cup vegetable oil
1 Tbs. white vinegar
1 tsp. vanilla

In a bowl, beat cream cheese. Add sugar, egg and salt. Mix well. Fold in chips. Set aside. For cupcakes, combine flour, sugar, cocoa, baking soda, and salt. Add water, oil, vinegar and vanilla. Mix well. Fill paper-lined muffin cups half full with batter. Top each with 2 Tbs. of cream cheese mixture. Bake at 350 degrees for 25-30 minutes. Cool 10 minutes and remove from pan.
Makes 18.

We have been making these as a holiday cookie for 30 years. Our recipe is named Fudge Cups, and we make them in mini-muffin tins. They are always a huge hit. :)
